Mmmmm. Nobody in my family knows exactly where this recipe originated, or why the heck we call it pizza eggs (there is sausage and cheese, but that's about where the similarities to pizza end). But it is seriously delicious.
It is a must-have on Christmas morning. And easy to make ahead of time!
From the kitchen of Mom
1 lb. hot, spicy sausage (browned & drained)
6 slices bread
2 c. milk
1 c. sharp cheddar (shredded)
1/2 t. salt
1/4 c. diced bell pepper (red & green are best...and festive)
1 t. dry mustard
• Break eggs into large mixing bowl and beat with wire whisk
• Add milk
• Coat bottom and sides of 9x13" baking dish w. vegetable spray
• Pour mixture into dish
• Refrigerate overnight or freeze up to a month
• Preheat oven to 350º
• Bake for 30 minutes (or until slightly brown & knife comes out clean)
Mom says, "I use RB Rice Sausage and 1-inch cubes of stale challah egg bread."
