These kebabs were amazing. [Scott art directed that first photo].

We marinated cubed beef round, white onions, red bell peppers, zucchini, red potatoes and mushrooms in Italian dressing for a couple of hours, then skewered them (and added cherry tomatoes), and grilled.

Tossed the asparagus in olive oil, garlic and fresh lemon juice, and grilled.

I'm not usually a big mushroom fan (they are usually too spongy), but these were delicious. I think they were the best thing on the skewer!

One piece of advice: put all the red potatoes on one skewer, without anything else, and cook them for longer. They'd also be amazing with some rosemary.

Easy, healthy, delicious.

Oh! And I found out both "kebab" and "kabob" are correct.
