Ebelskiver Pancakes, Hon

Maggie made these amaaazing little pancake balls on Sunday morning with her new Ebelskiver pan. Lemme tell ya, they are quite possibly the best pancakes I've ever had.

You layer in the bottom bit of batter, then add some filling. We used fresh apples (minced) for half the batch, and fresh strawberries & peaches (also minced) in the other half. Add another little dollop of batter. Then serve with a little Vermont Maple syrup and mmmmm!

The rookie mistake? We ate these before going to Honfest. We didn't know there was such great food at Honfest. But did that stop us?
